Rustic way to use stale bread:
AZOREAN BREAD CAKE
1-2 stale bread rolls (a baguette is ~2-3 rolls)
Add 1 c of milk per roll (if using 2 rolls, add 2 c of milk)
Let the bread soak in the milk for about 10 mins, then mix well
Add 2 eggs per roll (for 2 rolls, add 4 eggs)
Mix dry, then add to rolls:
1 c sugar
1 c flour
1 Tbsp baking powder
5 Tbsp cocoa powder
1 c shredded coconut
Grease a baking pan (like a Bundt with butter).
Pour in mixture and bake at 180°C for 45 mins.
